I can’t help but smile today. The sun is shining and it is 78 degrees! Our winter wasn’t particularly terrible, but the first signs of spring are always a welcome sight. Our grass is starting to green up and our trees are blossoming. The thought of a warm run in a tank top and shorts this afternoon sounds like heaven.
And with the first signs of spring, I can’t help but think about all those foods the signal warm weather…. watermelon, sweet corn, frozen margaritas, smoothies, and a fresh salad. If you haven’t checked out my frozen margarita recipe that I’ve tagged up there. Do yourself a favor check it out, make it and enjoy it. But be prepared, it’s addicting.
Let’s talk salad. I’m a sucker for a great salad. However, I’m not as creative with recipe development as I’d like. I often rely on packaged chopped salads to get my fix. I’ve tried to be better about collecting new salad recipes. I’ve even got a “fresh greens” board on Pinterest, check it out here. But this salad is a tried and true one in my household.
I’ve been meaning to share the recipe for this summer for awhile now. It’s very simple yet very delicious. Crisp tart green apples and dried cranberries compliment the crunchy cashews and romaine lettuce. The dressing is based on red wine vinegar and is slightly sweet with the hint of green onion flavor. Yum! Whenever I’m asking to bring a salad, I usually go for this one.

One warning though, the recipe makes a lot of dressing! I usually only use less than half. Add as much dressing that works for you.
