Happy Sunday! I wanted to share a recipe review with you that we tried earlier this week. It was another slow cooker recipe for Cashew Chicken found pinned on my Slow Cooker recipe board on Pinterest.
What drew me to try this recipe was first, that it’s a slow cooker recipe which makes dinner so much easier! And second, the idea of cashews with chicken sounded delicious and something I’ve never tried before. I’m not a great food photographer but check out the photos from the original recipe website. They alone made me pin this recipe. And I’m glad I did. It was wonderful.
This recipe is unique in that you “bread” and “brown” the chicken first with cornstarch and pepper. This gives the chicken great flavor and the cornstarch makes the sauce thick in the finished product.
After you brown the chicken breast pieces, they are added to the slow cooker along with soy sauce, rice vinegar, ketchup, sweet chili sauce, brown sugar, garlic, ginger, and red pepper flakes. For the exact amount, see the original website for recipe. This was cooked for 4 hours on low.
Since I like my cashews to have a little more crunch, I added those after the chicken was cooked just prior to serving along with diced green onions over brown rice. Here’s the finished product!
The sauce was sweet and thick yet the chicken was tender with crunchy cashews.
