So I made my first smoothie bowl this morning. I feel so “on trend” now 🙂 And really, it was just making a smoothie and putting it in a bowl instead of a glass and topped it with some goodies.
Here’s what went into my Vitamix:
- 1 1/2 frozen bananas
- 1/2 c frozen strawberries
- 1 SunGold kiwi
- 1/4 c crushed pineapple (in juice)
- 2 tbsp flaxseed
- 1/2 c milk
- sliced bananas
- sliced SunGold kiwi
- sprinkle of toasted coconut granola
- sprinkle of flaxseed
Let’s talk about all the goodness in these ingredients. First bananas give lots of flavor and texture but fiber as well. There are tons of added benefits of the simple banana which is why I try to eat one at least once a day.
Any berry with a deep red color has great nutritional benefits. Strawberries have at least 100% of daily serving of Vit C which has the ability to boost your immune system, important to do as we head into fall. Vit C can also improve collagen production which may improve skin elasticity and resilience.
Have you tried the SunGold kiwi from Zespri? I recently tried these at the ONE LIVE event in Chicago. They are juicy, mild and very very sweet. Did you know kiwis have an enzyme that can digest proteins found in red meat and fish? (Source) Pretty cool, huh? Here are 10 reasons to eat one of these babies.
Like the kiwi, pineapples have the same enzyme that can digest proteins. But they provide an excellent amount of manganese and Vit B1, both for energy production.
Flaxseed: 2 tbsp provide 1800 mg of omega-3 fatty acids which most people don’t get enough of. As a breastfeeding mom, these are essential for my growing baby.
The fun part was eating it. No, it was more fun to watch Corrine be completely fascinated with it. It was like I put something so foreign in front of her. She was so inquisitive about it at first. And then she dug right in.
I love it when she tries something new. It makes me feel so good to provide her with such a great breakfast and know that she really enjoys eating it!
